1c Chicken Sausage, cooked and diced 2 Large Eggs, plus 2 Egg Whites
1/2 Small Onion, diced
3/4c Roma Tomatoes, diced
1c Non Fat Cottage Cheese
3/4c Low Fat Feta Cheese
1/2c Lowfat Milk
2c Baby Spinach, washed and patted dry 1tsp Baking Powder
1 1/2tsp Sea Salt
1tsp Black Pepper
1/2tsp Fresh Thyme
1tsp Fresh Parsley
1/2tsp Fresh Oregano
Preheat your oven to 350 degrees. Over medium high heat, on stove top, heat large skillet coated with non-stick cooking spray. Add sausage and onion and saute until the onions are translucent. Set aside. Coat a 9" cast iron skillet with non-stick cooking spray.
In a medium bowl, whisk together the eggs, egg whites and milk. Add in the remaining ingredients
(including the sausage and onions), and gently combine. pour into the skillet, making sure to distribute
evenly. Bake for 40-45 minutes, or until a knife comes out clean.
